These are great. The only concern I have for you GT is the common thread that ties everything Canadian together....that is....BEER!
The beer is great BTW. I saw a comedian recently from NJ who did a whole set on being Canadian. He was all pissed off at the Canadians for not being at all original. In fact Canada does not even have its' own cuisine according to him. We can go out to eat for Italian, Japanese, Chinese, Indian , and yes American, but did you ever hear anyone say " Hey. let's go out for Canadian tonight!"?
BTW, my fathers' side of the family all came to the US from Canada! Great people.

Au contraire my half American friend, there are many instances of Canadian cuisine. Defining what is Canadian food depends on what part of Canada you're from! The traditional cuisine varies from British Columbia (Salmon & Wild Rice, and Nanaimo Bars) to Newfoundland (Cod Cakes and fish cheeks), to Native dishes (maple sugar pie) to French Canadian Foods (Tortiere, Yellow Pea Soup and Poutine).
Speaking of Poutine, did you know it is almost uniquely Canadian to have gravy on your fries? In England, that's how they can tell Americans apart from Canadians - Canadians ask for gravy on their fries.
From the East Coast - Irish Stew, Fish Chowders, Bangbellies (a pork/rice bun), Toutons (Pork Bread), and Duffs (like a dumpling), Molasses Tarts and Partridge Berry Coffee Cake, chocolate bread pudding, oat bread, Cape Breton scones, Creamed Potato Balls, Baked Stuffed Lobster,
Native - Posole Stew (uses hominy), corn casserole, Frypan Fork Bread, Cornmeal pudding, Maple Fudge, Wojape (a berry pudding)

The point is that Canada - the world's second largest country geographically - is a melting pot of diverse culinary heritages from Europe, Asia and North America. British and French settlers have influenced Canadian cuisine the most. The British imprint is today evident on the Atlantic and Pacific coasts while the French mark is obvious in Quebec and parts of the Maritimes. However, much credit belongs to the native First Nations and Intuit peoples who helped teach the British and French settlers how to forage, farm, hunt and cook the distinctive bounty of Canada.
